Whey Powder Carrot Cake

 

With this you can up your protein with a delicious take on a classic carrot-cake recipe. And feed the whole gang as well!!

Serves 12

The important stuff

  • Preparation time: 15 minutes
  • Cooking time: 20 minutes 
  • Calories per serve 318
  • Protein 12.4g
  • Carbohydrates 28.6g
  • Fats 16.2g

Ingredients

  • 250g wholemeal flour
  • 2 scoops (60g) True WPI 90 French Vanilla
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 ½ tsp cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ½ tsp salt
  • 125ml olive oil
  • 4 eggs
  • 80g brown sugar
  • ½ cup stevia
  • ½ cup apple sauce
  • 1 tsp vanilla extract
  • 300g grated carrot
Icing

Method

  • Pre-heat oven to 180 degrees. Line tray with muffins liners.
  • In a large bowl mix together all the dry ingredients.
  • In a separate bowl mix together all the wet ingredients.
  • Pour the wet ingredients into the dry and stir until combined.
  • Evenly distribute batter into the muffin liners and bake for approximately 20 minutes, or until a cake tester comes out clean.
  • Leave to cool, then stir together the cream cheese, protein powder and maple syrup. Spread on top of each muffin.

 

Protein Cacao Puffs

Protein Cacao Puffs

Light, crunchy and absolutely more-ish, these flavoursome bites will have you coming back again and again. Make sure you prepare plenty they won't last long..... 

Serves 12

The important stuff

  • Calories per serve 90
  • Protein 3.5g
  • Carbohydrates 6.5g
  • Fats 5.3g

Ingredients

  • 25g puffed rice
  • 1 scoop (30g) True WPI 90 Rich Chocolate
  • 30g melted nuttelex
  • 20g honey
  • 30g natural peanut butter
  • 2 tsp cacao powder
  • 4 squares dark chocolate (melted)
  • 1 Tbsp coconut oil (melted)

Method

  • Place nuttelex, honey and peanut butter into a small saucepan over a low heat and stir until melted, then remove from heat.
  • Add mixture into a large bowl with puffed rice and protein powder and stir until combined.
  • Firmly press the mixture into a muffin tray (I used a mini 12 cup silicon muffin tray).
  • Melt the dark chocolate and coconut oil together, the evenly distribute on top of each serving.
  • Place in the fridge overnight to set, then enjoy!
