Chickpea & Eggplant Curry
This delicious curry is ultra creamy and soul nourishing. The perfect dinner to warm up to in winter! With the help of Sahara, this curry takes no time to prepare … all you gotta do is let it simmer and create magic!
What you need:
- 1 Tbsp coconut oil
- 1 brown onion, diced
- 1 tbsp Sahara Moroccan Seasoning
- 1/2 an eggplant, cut into 2cm cubes
- 1/2 a zucchini, cut into rounds
- 1/2 head of broccoli
- 1 tsp curry powder
- 400ml coconut milk
- 1 cup chickpeas, drained and rinsed
- pinch of salt
How to make:
- Sauté the coconut oil, onion and Sahara seasoning in a sauce pot until fragrant.
- Add the eggplant and zucchini, and cook for 5 minutes. Then add the broccoli, curry powder and coconut milk and let simmer for 20 minutes.
- Add the chickpeas and salt and continue to simmer for another 5 minutes. Serve!
Grilled Salmon & Prawn Skewers
These grilled salmon and prawn skewers are high in protein and omega-3s, and not to mention damn delicious! Try tofu for a vegetarian or vegan option.
What you need:
- salmon fillet
- 10-12 prawns
- skewers
- olive oil
- Mingle's ranch Sally seasoning
How to make:
- Make the skewers by sliding 4 prawns or 4 salmon pieces on a skewer.
- Sprinkle with Sally ranch seasoning.
- Grill for 3-4 minutes, turning occasionally.
- Best served with salad or veggies.
Baked Cauliflower
With just a shake of our Sass smokey seasoning and a sprinkle of olive oil you will have delicious tasting cauliflower in 30 minutes after baking it in the oven at 180 degrees.
If you’re not a fan of cauliflower we reckon we can convert you after trying this!
What you need:
- 1 Cauliflower Head
- Sass Smokey Seasoning
- Olive Oil
How to make:
- Break the cauliflower into small pieces
- Sprinkle our Sass smokey seasoning thoroughly over the cauliflower
- Sprinkle olive oil
- Bake for 20-30 minutes at 180 degrees
- Simply eat as a side or add rocket and some pine nuts and you have a great cauliflower salad.
